Learning outcomes

To identify which knife to use for what task; to be able to sharpen a knife; to improve knife skills; to increase kitchen safety awareness; to know more about vegetable selection, noodles, sauces & thickeners and Asian flavourings.

Stepping stones

This class will give you the confidence to vary the menu and ‘pimp it up’ for a special occasion, ‘dress it down’ for a meal in minutes or ‘shake it up’ and extend your repertoire by using different ingredients and cooking methods.

By the end of the course, you could be serving up Taco’s, a cold noodle salad or even vegetable spring rolls!

week 2

Spaghetti Bolognese

To use minced beef in sauces; learn about Mediterranean flavourings; select and cook pasta

Stepping stones

This class will give you the confidence to vary the menu and ‘pimp it up’ for a special occasion, ‘dress it down’ for a meal in minutes or ‘shake it up’ and extend your repertoire by using different ingredients and cooking methods.

By the end of the course you could be serving up a Lasagne, Chilli-con-Carne or Mince & Cheese pie.

Mariners Fish Pie

To introduce fish preparation and cooking; creating the perfect mash and cooking a basic white sauce (bechamel). 

Stepping stones

This class will give you the confidence to vary the menu and ‘pimp it up’ for a special occasion, ‘dress it down’ for a meal in minutes or ‘shake it up’ and extend your repertoire by using different ingredients and cooking methods.

By the end of the course you could be serving up a Cottage pie or fish cobbler, a Spanish Paella or even the Pacific treat – ‘Kai Moana soup’ (cold fish soup/Kokoda/ Ceviche).

Sunday Roast Dinner

Selecting, preparing and cooking suitable cuts of meat for roasting; vegetable preparation and cooking method selection; how to make proper gravy that doesn’t come out of a packet; to learn about what sauce accompanies what meat; how to get the planning and timing spot-on

This class will give you the confidence to vary the menu and ‘pimp it up’ for a special occasion, ‘dress it down’ for a meal in minutes or ‘shake it up’ and extend your repertoire by using different ingredients and cooking methods.

By the end of the course you could be serving up a vegetable soup or even your own roast Christmas dinner!

Curry with Rice

To developing your skill and knowledge in meat- based sauces; how to select and use Asian spices; learn about different types of rice and how to cook them

This class will give you the confidence to vary the menu and ‘pimp it up’ for a special occasion, ‘dress it down’ for a meal in minutes or ‘shake it up’ and extend your repertoire by using different ingredients and cooking methods.

By the end of the course you could be serving up a Thai curry, a casserole with dumplings or a Hungarian Goulash.

Cheese & Bacon Quiche

This week you’ll learn all about the versatility of the king of pastries – Shortcrust pastry and how versatile it is and quick to make; how to use eggs as a thickener and  how to adapt recipes

This class will give you the confidence to vary the menu and ‘pimp it up’ for a special occasion, ‘dress it down’ for a meal in minutes or ‘shake it up’ and extend your repertoire by using different ingredients and cooking methods.

By the end of the course you could be serving up a whole range of pastry-clad delicacies like meat pies, fruit pies and tarts. You’ll have them queuing up down the street!
