To understand which wheat flour can be used for what purpose; to make fresh egg and egg-free pasta dough, to roll out various shaped pasta; to make several pasta sauces using seasonal ingredients.
Stepping stones
This class will give you the confidence to vary the menu and ‘pimp it up’ for a special occasion, ‘dress it down’ for a meal in minutes or ‘shake it up’ and extend your repertoire by using different ingredients and cooking methods.
By the end of the course, you could be serving up all kinds of pasta shapes including flat pasta for lasagne or cannelloni, thin pasta such as tagliatelli and filled pasta such as tortellini and ravioli.

By the end of the course, you could be serving up homemade gnocchi with mushroom carbonara sauce or beetroot rosti.

By the end of the course, you could be serving up custard slices, apple turnovers or pork meatballs.
